Now and then

By now you probably know us as Von’s 1000Spirits, the place you go when you want great craft cocktails and delicious scratch made meals. We’ve worked hard to hone in on our specialties including our scratch sourdough kitchen and our alchemy bar.

We have made a lovely home at the top of Harbor Steps on the Seattle waterfront. But did you know that we used to be a much different restaurant? Von’s 1000Spirits is the dramatically reimagined version of Von’s RoastHouse, which, for 25 years was located at 619 Pine St. in the Hotel Theodore in Seattle. Von’s RoastHouse was opened by legendary restauranteur, Tim Firnstahl. After 25 wonderful years at 6th and Pine, Tim and his daughter Merrisa were beginning to reimagine the brand and take our restaurant to the next level. Von’s 1000Spirits (the one you know and love) was a collaboration involving Tim Firnstahl, his daughter Merrisa Firnstahl-Claridge, and his son-in-law and executive chef Jason Amador. Together they have created an attractive space with enough innovations to lure the hippest of cocktail-culture lovers, along with anyone likely to enjoy an extraordinarily juicy gourmet burger.

Von’s has always taken pride in carrying on the legacy of Von’s RoastHouse, while keeping a fresh and new vibe of our own. One thing that we knew we wanted to carry on from the old Von’s were our popular $5 scratch martinis and the crowd-pleasing Wagering Wheel that is used to pick random drink specials. We have been at our “new” location at 1225 First Avenue in Seattle for 8 years now.

Things to do in Seattle

Our location is absolutely ideal if you’re planning a day in Seattle. We are located within minutes of Pike Place Market, the Seattle Aquarium, The Great Wheel, and the Seattle Art Museum. Spend your afternoon perusing the flowers and fish mongers at Pike Place Market. Then head over to the Seattle Aquarium to check out the Giant Pacific Octopus and Sea Otters. After all that excitement, you’ll likely be ready for a great dinner and some craft cocktails on our outdoor sundeck at Von’s 1000Spirits. After dinner, be sure to head down to Seattle Great Wheel and catch the sunset over Elliot Bay. What a great way to spend a day in Seattle!
